About the Role

Operations Planning & Budgeting

  • Lead operations planning for the brewery based on monthly forecasts shared by Corporate.
  • Schedule monthly and weekly production and align with targets for volume, quality, and cost.
  • Engage with Sales to understand market penetration, product off-take, and anticipated sales growth for production and dispatch planning.
  • Formulate the overall brewery budget from consolidated inputs and work with the CSCO to finalize it for corporate approval.
  • Ensure availability of raw materials, packaging, utilities, logistics, and manpower while optimizing utilization and minimizing costs.

Operations and Dispatch Management

  • Monitor procurement and quality of raw materials, malt, adjuncts, and yeasts while balancing inventory and resource reuse.
  • Oversee brewing and production operations to ensure timely dispatch of quality products in line with internal and statutory guidelines.
  • Coordinate weekly and daily dispatch planning with the local Sales Head and resolve dispatch inefficiencies.
  • Identify and resolve losses and constraints related to processes, manpower, materials, capacity, and customer compliance.
  • Conduct product trials, review product performance, prepare reports, and share insights with HO and CTC teams.

Operations Review

  • Review daily operations using production volumes, bottling efficiency, consumables, inventory, expenses, and safety indicators.
  • Lead daily meetings to track actual performance against targets and provide variance correction inputs.
  • Review flagged issues, design corrective actions, and lead actions for production and maintenance operations.
  • Prepare KPI and KAI reports and present production and maintenance performance reports to HO and unit leadership.

Quality Tests and Sensory Evaluation

  • Conduct quality tests and taste sessions for water, brew, filtration, carbonation, lager beers, and lauter tanks.
  • Monitor quality indicators, lead sensory evaluations, identify red flags, and drive corrective actions.
  • Review product, process, and raw-material quality matrices and perform root-cause analysis.
  • Collaborate with microbiology and QA teams on beer health indices, deviations, and course corrections.
  • Check raw-material samples and approve materials for use.

Audit and Compliance

  • Ensure statutory compliance for labelling, packaging, factory and boiler maintenance, infrastructure, billing ledgers, and inventory.
  • Facilitate process and quality audits, review findings, and support closure of audit queries.
  • Support financial and vendor audits by providing accurate brewery data and audit assistance.
